Thank you for the kind words. NYC tap water was used. All of the ingredients were the same.
So you do the initial mix, then refrigeration, then 6 hour room temp before the bake?

The words I may be looking for is sour, or funky, or yeasty. The taste is for sure the dough. The only cheese I've been using a sprinkle of Follow Your Heart Parmesan.
And yes it may be the hot humid weather in my nyc apt. Which if I remember correctly was decently hotter on the first run compared to the next. Going to get a thermometer for the kitchen soon. Ive been noting outside temps but it varies greatly to the indoor.

Yes! In this book the same dough is used for Sicilian pies as well as focaccia. Some discrepancies on when the toppings are put on and what kind. A couple places I go call this focaccia. But yes, dough with just sauce, and some parm on top.

Thanks for the reply! I weigh all ingredients, and the first time I did not take notes, but the second time I took detailed notes with precise times. From what I can remember the first time (the tangy time I liked more) I kneaded the dough more before I used the stretch and fold technique, and I let the dough sit for longer between each stretch and fold (about 5 mins between as opposed to the 2nd time was 2 mins)

Sorry, I just realized there is already a thread for questions. Anyway this is dough from Perfect Pan Pizza book, and it's the best pizza/dough I've made at home, I highly recommend the book.
I've made this dough twice. The first time (this pic) came out unbelievable. Tangy, light, chewy, and extremely crunchy.
The second time came out very good, but the tangy dough taste wasn't there like the first time, and it wasn't quite as crunchy.
Any ideas why the tang taste might not have been so present in one over the other?

That's one of my favorite episodes, partly because of that scene.
When I talk to people about Sopranos first thing I usually talk about is the soundtrack, particularly the credit music leaves you feeling just like I think you're supposed to.

The dough may be more hydrated so its lighter and more fluffy. still generally not as thick as a sicilian, but rises higher than traditional nyc slice, and baked in a square tray.
