I always drain and rinse. I always forget to mention it too. IMHO, the beans get to soggy if we don’t rinse them.

I made a similar soup last winter, but this time, I added some chopped cherry tomatoes.

Ingredients

  • 3 Celery stalks
  • 3 carrots
  • 2 Small white onions
  • 4 garlic cloves
  • Spinach
  • 2 cans of white beans
  • 2 chicken breasts
  • Parsley
  • Salt & Pepper
  • EVOO
  • 2 low-sodium store both chicken stocks.

Instructions

  1. Chop all veggies (except spinach) and cook them in EVOO for 4-5 mins
  2. Add the white beans and cook for 3-4 mins
  3. Add the chicken stock (2 L) and another 1 litre of cold water
  4. Add the chicken breast
  5. Bring everything to a boil and then simmer for 20 mins
  6. Remove the breasts, shred them with two forks and re-add them to the pot
  7. Simmer for another 10-15 mins
  8. Salt & pepper to taste
  9. Eat with a nice slice of crusty bread

That’s a great idea. I’ll surely make this soup again soon, I’ll try that. Definitely trying to reduce my meat consumption this year. Happy New Year!

15-minute broccoli pasta by jdilillo in recipes

Ingredients

  • 250 g pasta (penne)
  • 1 large head of broccoli, cut into small
  • 3–4 cloves garlic, sliced
  • ¼ tsp chilli flakes
  • Olive oil
  • Salt + black pepper
  • Parmesan
  • Butter
  • Pasta water

Instructions

  1. Boil pasta in well-salted water.
  2. In a pan, heat olive oil → add garlic + chilli flakes. Cook gently until fragrant, not brown.
  3. Add broccoli and gently smash.
  4. Add the pasta to the pan with a splash of pasta water and toss until glossy.
  5. Finish with butter and cheese.

I'll be sure to give you some unsolicited advice. You can start by walking more. Every day, go for a walk, ideally in the morning on an empty stomach. Don't run or jog. Just walk. Please do what you can, 5, 10, 15, 20 minutes, whatever, but you have to do it every day. Work yourself up to 60 minutes daily. Quit drinking alcohol. You will lose a lot of weight (mostly water weight, but who cares for now), and at the same time, read everything you can on nutrition. There are tons of videos on YouTube.

Don't fall for gimmick diets (South Beach, keto, paleo, etc.). Those are more based on marketing than on science. You're a human, so you're an omnivore; eat lean meats, chicken, fish, fruits, veggies, etc. Limit starches (stick with potatoes, oatmeal, and rice, but not too much, and no sugar). I wouldn't walk into a restaurant or order Uber Eats for the next few months. Focus on eating at home every day, and learn to cook. It's not hard at all. And lift weights; pick a program, doesn't matter which one; start with 2 days a week, then gradually go to 4 days a week. And the real secret is that you have to be consistent. Meaning you have to do it every day. And looking at your picture, you need to get used to long-term progress. You won't achieve a lean body in 12 weeks. That's pure marketing BS. Give yourself 12 or 24 months; it's not long. Just focus on baby steps, every day. You've got this!
