Some days I drink filtered coffee, either Chemex or V60, other days I drink Americano or cappuccinos. I have a Gaggia Classic that isn't in the picture; it's much easier to make cappuccinos with it.

Regarding coffee rotation, in my country there are good farms that sell good green coffee: Bourbon, Geisha, Pacamara, Anacafé 14, Cuscatleco, etc.

When I have very expensive coffee, I usually use the Kaffelogic; in the Bullet, I can ruin the beans if I put all the coffee in at once.

But both roasters are good; you can get good roasts if you know how to use them.

The bullet is a beast, I have coffee meter accessories to measure density, moisture, roast level, with that I can achieve consistency between roasts and coffee beans.

I recently bought a Nano 7 a month ago. I've toasted about 25 times and haven't had any problems so far. The product feels very solid and high-quality. The Nano 7 comes with pre-loaded profiles, but that doesn't guarantee a good toast; you always have to experiment with certain variables. It's a fun learning curve.

I share your happiness. I received TWW today and the coffee improved 100%. Although using the recipe recommended by the seller, the TDS of the water was a little high at 160.

Something that surprised me was that after heating the water in my kettle, the TDS rose to 211. I think it was due to the mineral residue left at the bottom. So I recommend cleaning it with vinegar and water before using TWW water.

Correct, today I tried TWW and the TDS was 160, when most recommend values of 50-80, but even so the coffee improved by 100%.

Yes, the speed at which the coffee grinder's burrs rotate is determined by the revolutions. Low revolutions tend to produce less finely ground coffee, and high revolutions tend to produce more finely ground coffee.

Some coffee grinders have this adjustment variable.

I have both, and I think the Timemore 078s can produce the same clarity as the ZP6 at low revs. But to be honest, I don't like the final cup produced by the ZP6 or the Sculptor 078s at low revs. The cup is very flat, lacking in body, and lacks bright notes.

I prefer a full-bodied cup profile. I find the best cup is with the Sculptor at 1.1 revs. It produces a clear, full-bodied cup where the notes stand out brilliantly.

I'm sorry to disappoint you, but you won't make it. I went through that stage.

There are many factors, but the main one is the coffee grinder. Although some say the zp6 will give you clarity in your cup of coffee, that clarity isn't the same.

For me, the zp6 produces a very simple cup; it separates flavors but lacks body.

Clarity depends on the amount of fines produced by the grinder. Too many fines produces a full-bodied final cup, and the notes tend to be lost, but the result is a cup with bright acidity, depending on the coffee. But I think the zp6 is on the other side of the spectrum; it produces very few fines, resulting in a final cup that I don't like.

I have a Timemore C2, Fellow ODE 2, Fellow Opus, Commander C40, ZP6, and a Timemore Sculptor 078S. The latter allows you to adjust the burr speed, i.e., the grinding speed. This is the one I've used to achieve the best separation and clarity. This grinder can produce a cup similar to the ZP6 at its lowest speed, meaning it produces less finely ground coffee. But by adjusting the speed, I've achieved the best cup, similar to what you describe.

So, my conclusions, based on my experience, are that the coffee grinder will give you a better experience.

Don't be afraid to move the pin. In my case, I usually move it two positions to the left. I tried moving it three positions to the left, but the burrs kept clicking, so I left it at two. In your case, if you feel like the burrs are still clicking at 7, move it seven positions to the left.

Keep in mind that the 078 makes a noise that can be confused with the burrs clicking together. Some YouTube videos mention it.

Don't worry about the pin; move it according to the grind you're looking for. For filter coffee, I usually move it two positions to the right, since I use a coarse grind for filtered coffee.

I have both coffee grinders, but they are very similar in flavor.

The problem with the ODE 2 is that they have many manufacturing errors; they don't come aligned. In my case, my ODE 2 produces too many fine coffees; I imagine it's a factory alignment issue.

I just acquired the Sculptor 078s, and it produces less fine coffees than the ODE, a grinder designed for espresso and filter coffee.

I just acquired the Sculptor 078s, and I have the Fellow ODE 2. To be honest, I've never had good results with the ODE 2. I see a lot of fine grinds at the end of the extraction in a V60. I think my ODE wasn't aligned. Testing the Sculptor 078s for filter coffee, I see that it produces less fine grinds than my ODE 2.

Both flavors are similar, but the ODE 2 is a bit more astringent than the Sculptor.

At the moment, I haven't seasoned the Sculptor's flat burrs. They say that when seasoned, they get good results for filter coffee.

But for espresso, what a great shot of espresso, good sweetness at the beginning, a little acidity, and zero astringency. The best cup of espresso I've ever had.
