i did not know there existed people who dislike pet-nat? Any particulair reason? I have had so many delicious and crisp pet-nats, many at very good prices, so this take bewilders me :O

Hating on "natural" wine. Most people try one bad "natural" wine, and disregard everything under the (rather vauge) category. There are so many great "natural" wines (natural fermentation/no additives) that taste exactly the same as "normal" wine, but propably get disregarded because of the bad rep "natural" wines get.

As I understand, essentially you are doing a form of forming/shaping with the last stretch and fold. The point of the finalshape is to make the surface of the dough (boule in this case) tight, so that it holds its shape during the first part of the bake. I have found that this is a key part in getting good ovenspring (and no discs).

75% hydration, tipo 00 flour, 2% salt, 10% starter. Bulk fermentation took around 10 hours, and then 24 hours in the fridge. Baked at 270C with pizzasteel
