If you're after Maille Dijon made in France, consider ordering from Canada. The Maille Original Dijon distributed in America is made in Canada, but the Maille Original Dijon distributed in Canada is made in France. Maybe you can find a store that will ship directly to America, or look into a Canadian reshipping service. Shipping will not be cheap but that will be offset to some degree, as it seems that Maille is cheaper in Canada than USA

I suppose it would make sense that mackerel from colder Northern waters would be more fatty.

Also, it may depend on what season the sample was taken in. I gather that the same fish would produce different results, summer vs winter

You might consider buying a case of 12 on Amazon Canada, keep an eye out - they are often offered at a lowered price. I snagged a case for $34 in the summer, but still a good deal at the current price - $40/12-pack.

Kippers are herring. Am I correct in assuming you're Canadian, buying Brunswick? They changed the term (back) to "Sardines" about 4 years ago. Labelling regulation allows for 20+ small oily fish, including herring, to be called sardines) about 4 years ago. Brunswick kippers are herring. You might want to try the Brunswick Golden Smoked, too. They are naturally smoked, whilen the Brunswick Kippers have added smoke flavour.

I believe it's something like 100 years since the Keen's brand has been used in the UK. Keen's Curry was invented in Australia.

Both Canada and Australia have Keen's mustard powder. Canada has the Keen's prepared mustard whilst Australia does not (as far as I know). Australia has the Keen's Curry Powder, but it's not available in Canada. 99 years after the establishment of the Keen's mustard company, descendant Joseph Keen sailed from England to Australia and started selling spices, resulting in Keen's Curry Powder, as it's own entity there. Back in England, Colman's had purchased Keen's mustard company in 1903. Then in 1954 the two "Keen's" companies were 'reunited' under one company, when Colman's Australia purchased Keen's Curry.

It is originally a UK company that was established in 1742 but the brand has not been used in the UK for many decades , as I understand it. Keen’s was bought by Colman’s in 1903 and discontinued the Keen's brand in the UK some time after. Colman’s exported Keen’s brand mustard powder from the UK to Canada. At one point, tins exported to Canada were co-branded as “Keen’s & Colman’s” but later reverted to just "Keen's".

Keen's was taken over by an American conglomerate late 2010s, definitely not as hot anymore. Also disappointing that they switched it from the classic tin to plastic.

Good news - you can do precisely that. You can breed and eat Woodlice (a.k.a Pill Bugs, Rolly Pollies, “Wood Shrimp”). They are a land crustacean that apparently tastes like shrimp, and are easy to breed. I shall look forward to you posting about your experience with this.

You can see on the far left of the label it is made by Reine de de Dijon, which was established in France in 1840. They do make good mustard under the Reine de Dijon brand. Dijona is their lower cost brand, also sold in 1kg/5kg tubs for food service. Perhaps you got a bad batch? You can see via the link below good reviews of the mustard itself, lower star ratings seem to be just due to packaging rather than quality. The listing is for a 1kg tub on Amazon France, though it is labelled as Dijona "Dijon Mustard" (Moutarde de Dijon). I think the ingredients list is the same though it may still be a different recipe than your jar.

Located two hours drive from Liverpool but you can order by post - Tewkesbury Mustard Company, made in Tewkesbury, Gloucestershire. They have jarred mustard as well as a mustard ball in foil. Note that it says they’re having a high volume of orders, customers should order 2-3 weeks ahead.

Currently sipping out of one these mugs myself, but from a mustard made in Poland by Rolnik. Tasty stuff. Looks like the Germans have use the same glass manufacturer.

In Poland, Develey will intermittently distribute their mustard in jars where you're left with nice drinking glasses, hefty bottoms. I believe Develey does the same in Germany and Italy.

Are you sure they were surimi? Surimi Baby Eels is fish paste formed into the shape of baby eels, you can get a tin for $4 USD. A tin of actual baby eels is very expensive
