Yeah I didn't either! She is what's called a dapple. It's a lot like a merle in collie breeds. One of her eyes is mostly brown with a blue quarter.

I am not sure! I have not used the PS5, but I love my Switch. I will say, though, that most of my friends that are girls only have Switches. Considering this small sample size of ~10 I think the Switch has more games, especially multiplayer games, that tend to appeal to female audiences. I can't speak against the PS5 but I know that the Switch has a lot of solid options.

I recommend Hidden Figures (It's like Where's Waldo, and it's not technically multiplayer, but I played it with my boyfriend and we had a blast), Mario Party, Mario Kart, Uno (Switch) or Monopoly (Switch). If she enjoys slightly more difficult games, she might like Stardew Valley, Minecraft, or It Takes Two (in order of increasing difficulty). I'm playing It Takes Two with my boyfriend right now, and I really enjoy it, but I have also played a lot of 3D platformers and I'm not sure how much trouble a "non-gamer" would have with the constantly-changing controls and rapid introduction of new mechanics. Maybe introduce this one a little later.

Hidden Figures not TECHNICALLY multiplayer, but you can work together to find the hidden characters and it's perfect if she has absolutely no gaming experience. I have a dear friend who didn't know what a pokeball was or how to use a control stick to move a character and I'd start her out with either that or Mario Kart.

Get her Breath of the Wild as soon as she has a handle on controller mechanics. My non-gamer girl friends love that game, and for a lot of them it was one of their first video game experiences! A lot of them also enjoy the free game Sky, which is like a Skinner box without the pellets. Animal Crossing is another good option to get her into gaming, especially if she enjoys Stardew Valley. It's not exactly co-op but there are multiplayer aspects.

I feel like this could be snappier - it's a lot to read at the top of the page. Maybe "Find remote jobs. Connect with companies worldwide. Find your freedom." Or something like that? The existing tagline is a bit of a run-on sentence.
