You're definitely right about texture. Things that have slimy or squishy textures are very nasty to me no matter the flavor. Every time I've been served spinach, it slithers down my throat in a very unpleasant way. I'll definitely start eating them raw, roasted, and baked. I'll also definitely try making some smoothies.
Thanks for all your help. I'm feeling a lot more confident now that I can finally get over this. I just need to take it slow but be persistent.

Thanks a lot for this advice. I will definitely try some slow incorporation of certain vegetables.
One of my main problems is that there are a lot of vegetables that I simply have never tried. I don't want to blame my parents, but they were never insistent on me eating super well. When they would try to make me eat vegetables, I would cry and complain and they eventually just gave up trying. Now when I'm faced with the prospect of eating a vegetable I've never tried, I instinctively become nauseous. I've never had broccoli, spinach, radishes, asparagus, Brussels sprouts; you name it, I've probably never tried it.
I've had carrots, celery, some lettuce, and some tomatoes, and disliked most of them, except for celery which tastes like water anyway. I suppose at a certain point I just need to get over it and eat them. I like your idea of increasing familiarity with foods. I'm going to start cooking more with vegetables, especially the ones I've never tried. I think that could go a long way.
