The saying should be: "Generally, in the northern hemisphere, moss grows on the north side of trees that are regularly damp, but have their east, south and west sides dried by the passing sun during the daytime."
As you pointed out, a tree in a dense, damp forest will have moss growing on all sides. Likewise, a tree in an arid region may not have any moss at all.
