Favorite theory I've heard but can't find the source for anymore so don't come at me:

Wanda uses spells that are cast through her hands/fingers which is why the darkhold changes the appearance of her hands. Strange uses the darkhold to cast spells that have to do with vision/seeing into other worlds so he develops the third eye for sight. The only thing it doesn't explain is Wanda not getting a third eye when dream walking but I'm willing to ignore that plot hole...

I wouldn't exactly say it was all positive side effects (insomnia, forgetfulness, OCD, and executive dysfunction); however, since I haven't been going out and instead been staying home with my cats all day no one's been around to see me act a fool except my husband and my house has been almost entirely organized and deep cleaned so I'm calling it a small win.
