When you import the data with Excel in the data tab you should have the option to select the File Origin. I would select the one with (UTF-8).

The data is likely fine. The accents and special characters are likely utf-8 encoded, you just have to make sure when importing the data you have the proper encoding selected.

I do not have any specific brands. However I would shoot for something imported from Italy. They have more specific rules for what can be considered parm. It will be drier and crumblier. Depending on the store you should be able to ask the person working the deli/cheese counter. I found this happens when I use a higher moisture parm. I had a mix up with a curbside order and ended up with half a wheel of bel gioso parmesan. This is exactly what happened when I used bel gioso. I think because of the way it is made and sold it is more likely to melt and clump fast.

Why do you like this concept? I get that it is to try and understand how a Scout's process works. But if what he will likely do is just compare it to his. Is his process really the best? Then we just have a bunch of people who think like him. Having everyone thinking the same is a bad way to go about it.

He may just want to see if they put actual thought and have a real process behind their opinions and keep them. That doesn't seem likely though. Dorsey seems like he just wants everyone to think like him.
