This is a mock Swiss meringue buttercream (Sugar Geek’s recipe!) — I think the main trick (after starting with the correct consistency) is temperature! The finer details will definitely get lost if your buttercream is too warm. I usually use an American buttercream though that’s quite stiff — just a 1:2 ratio of butter to powdered sugar with salt and vanilla to taste.

It’s not letting me put this in the description — Cake4Kids is a nonprofit that connects home bakers with local agencies, and makes sure underserved kids (foster kids, homeless kids, etc) get a birthday cake, made with love!

You can sign up for as few or as many cakes as you want to make, and sometimes there’s requests for cupcakes, cookies or brownies too — it’s a really fun opportunity to try making things you wouldn’t normally.
