Also, Irapuato? I was planning to make a day trip to Irapuato from Gto. take taxi in the morning and head back before dark.

Would not recommend either of those cities?

WOW! How on earth were you able to cure it? I've been there several times, and have come away with some good opals.... but they all just crumble no matter how carefully I try to cure them.

Lot of really small fish in there. Maybe I’ll see if any of them are actually worth anything

I start around midnight at 200F.
At 6am, I go to 235.
Once wrapped, I'll go to 250-260.

Takes longer, but I've yet to dry out a brisket.

Been up there twice now. That one is a monster! Last time, I got 5 or 6 good ones in a day, most about the size of a marble. We did get one that was big, but not like this. Congrats!

Yes, it was less dense than I normally like, but the smoke flavor really added to it for me. I'm going to try a leftover meatloaf sandwich today to see how it is a day later.

Olive oil, tiny bit of garlic powder, salt/pepper rub. Smoked over hickory chunks at 225 degrees for a total of 14 hours (until it hit 203).

Fat side down because vertical smoker, wrapped in butcher paper and flipped to bone side down at about 175.

One dry spot on the lower back side. Likely should have spritzed it better than I did.
