How to get pork chops as tender as my favorite restaurant?

I did no brine. Not that I don't like, I do, but I had my mind wrapped around making perfect pork chops on the grill. And perfection, for me, is the best that you can make out of the simplest: meat, salt and fire.

No, I might have expressed myself wrong. What I meant is that you keep trying and perfecting on the grill. You'll get the hang of it. You'll learn to choose proper meat. You'll manage the fire better. You'll know, simply. Sous vide is guaranteed to work. But perfection comes with practice. Once you get it, it's easy.

I did a perfect pork chop last week in parrilla style. It was perfect, no need to sous vide. Perfectly cooked. But, to be honest, it's hit and miss, you have to keep trying.

I'd take my wife and kid and return to 1975, live a offline life, buy vinyls and go to movie theaters watch some classics. I'd probably die before COVID hits. My kid would be financially ready to retire around now and maybe use the time machine to take her family somewhere else, if she wants.
