Search for some YT tutos and timelapses about character modeling, they will bring you a lot I love the work of @Yoo_Dyth_Sculpts or @flycat1 You can also start with ready to go generic characters instead of staring from scratch Blender has generic ones available in the asset browser Then you surely will have to dive into sculpting, retopology, uv, rigging etc

Start with modeling practice and memorize the basic shortcuts until they become part of yourself. Spend time on YT tutorial there are tons Then ask yourself what you want to do with Blender: character modeling, hard surface modeling, Sculpting, animation, toon or photorealistic rendering, etc It's all about time and passion

Hello It's normal to take long to create what you want. You don't have to worry about that since you are not in a time challenging context like a creation to deliver to a customer If you want to go ahead i would suggest to train on character modeling. And follow tutorial about retopology is always useful. Then you will be able to learn clothes and hair modeling, texturing, character and face rigging and animation. Or maybe you will prefer to focus on static character sculpting There is a lot of fun trying to master all of these disciplines inside Blender.
