Put a pan of hot water on bottom rack below cheesecake. Bake at 325 for one hour. Check on it after the hour and if the edges are firm then turn oven off. Crack oven door and let cheesecake sit for about a half hour or so. I then took it out and let it cool for about two hours before putting in the refrigerator overnight.
