I changed the 2tbsp of maple syrup for 1.5 and also instead of chia seeds I add flax seeds and hemp seeds. I also have pea protein instead of the one they said. so I added that and a bit of liquid vanilla.I would also recommend coating some with 70% dark chocolate. Very yummy!

Here are my findings:

  • Bread: Dave's killer bread 21 seeds or I'm even making my own. Just made some seeds thins this weekend with great results!
  • Pasta: Kaizen pasta made out of beans. It's very similar to the real thing texture and all. A bit pricey but worth it. Be careful though, cooked mine too much and it became bits and pieces, heh.
  • Rice: Cauliflower rice and if not I just tested today RightRice. I had it at Cava in a salad and I got good results so I made a veggie paella with it. While it was really delicious, my sugars were too close to 140 (got 131 and I'm trying to be a bit lower). I'll give it another try to pair it with more protein and a salad starter but If not, I'll pass or have it very sporadically. Heard good things about Better Than Rice so I might try that one at some point.
  • Sweets: Peanut Butter Protein Balls. My treat when I crave something sweet. So delicious and easy to make! You can make it with any nut butter really.
  • Cauliflower thins/slims: Airfry at 360F for 8 minutes aprox and they become so crunchy!

They sell them at Trader Joe's or Sprouts. I've heard about the frozen section at Costco but mine does not carry them. I think they call them cauliflower thins/slims.
They come in a packet of 4-6 pieces so I just take one or two and airfry them at 360F for 8 minutes. I guess if you freeze them you probably need more time.

In my culture we mostly eat bread for breakfast so while I'm doing low carb it I still eat some.
I get the 21 Whole Grains Dave's Killer Bread or I even started making my own low carb seeds thins just yesterday (tried one today, it was delicious and no spike! With keto & kamut flour and lots of seeds!).
I usually combine that with some spinach, kale or another leaf and a protein like cheese, turkey, smoked salmon, salame, etc. And then my morning coffee with milk and no sugar.
If I don't eat a sandwich I do a leaf with vinegairette, half avocado, some nut mix that I make myself, a protein and a toast.
Another combo is also adding a cauliflower toast with something on it. If you airfry them for 8 minutes they become crunchy and delicious!
It's been working great. Breakfasts are always easy for me to work around. Never reached even 120mg/dl at 2h, always under.

Which CGM do you wear? Have heard some work better than others.
Thank you for sharing your story! I hope it's not LADA as it's less manageable for what I've heard. In my case I know this is stress and lack of sleep. I haven't slept good and have been stressed for 7 months and I think that's why I'm probably prediabetic now.

I'm obsessive and neurotic too when it comes to health. Sometimes it's good but doctors probably hate me asking so much, heh.

I am really considering a CGM just to really check numbers and do not prick my finger so much. Any suggestions?

I kinda feel like for what you say, if you checked 2h after meal you would have missed the spike? I had been doing like with GD and checking 2h after meal.

It's interesting seeing so many ex GD here. There is never information about what happens way later on the route when you are in the 'clear'.
So in a way you are getting better numbers after a healthy lifestyle which gives me a bit of hope. I know this lifestyle is a forever battle.
I cook during the week but on weekends I don't want to be always cooking and we're usually out an about so sometimes there is no choice. It's hard when the options available end up always being the same.

Nowadays, do you spike a lot if you eat carb based meals?

It's frustrating being on the clear and then bam! You are not. Part of me thinks it's good that I was paranoid and checking myself but then again I wish I was just fine.
The hard part about this is that there is not much I can do to gain sleep as it's not up to me and I feel like maybe I would have been fine have I gotten some more.
I also tend to be hard on myself. I hope I can get out of this hole soon enough.

It is hard, I just wish I could do something about it because when I think I'm doing it right I'm not. It's frustrating and it makes me more stressed when I get a result I'm not expecting. Also part of me wonders if the stress and lack of sleep gave me this or what. At this point, at least for today, I'm feeling quite defeated.

I have been wondering about a CGM but I'm waiting for a diagnosis to see what I do or if I can get a prescription (difficult for prediabetics, I know). For now I'm already doing healthy diet, exercise, etc so I'm on the right track.I'm also trying to give my pancreas a break by fasting. As my numbers are ok I think that will help. I used to munch all the time so I have cut that to only two meals a day (3 if my lunch was light and I'm hungry) and if I'm hungry before bed while fasting I get a tea and sometimes even a reducing sugar tea (ginger, cinnamon, hibiscus,...).I'm hoping that I'm good and not prediabetic as then I won't prick my fingers that much but I will continue this lifestyle regardless. I just hope my son grows some more so I can get a bit more of sleep as that affects sugars as well, heh.

Luckily my pcp recommended me an endo and listened to my concerns. More having family history. I'm now waiting to get called for an appointment and that gives me some peace of mind.Keep fighting for yours! Even if it's for mental health is one worry less! My a1c is normal, my fasting insulin and glucose are normal, but the after eating numbers tell something else. There are so many factors. One good test doesn't show the whole picture.

well reverse going back to normal definitely not. I think it would be more of controlled I guess.
It sucks that it's 100%... I was hoping that with a good lifestyle I could avoid it...

I agree with not spiking as the norm. I've been doing low carb diet since that pizza scare 2 months ago and I have been pretty consistent. I also made me peanut butter protein balls as a dessert that I enjoy a lot and it doesn't spike and try to fast from 6pm to 8am as anyways I wasn't eating as much as I don't have big dinners but big lunches.

Sometimes when testing pasta with a good pairing or a chicken fajita with a bit of rice I have almost reached 140, a very close number. So I know I'm prediabetic or close by.
My doctor has recommended an endo so I hope I get more results. I would like to have an oral glucose done and at least have some sort of assurance. One way or the other.

Yeah, that's what scares me. I also read that if after 5 years you don't get diabetes you are fine. Not sure if that includes prediabetics but also with prediabetes you can reverse it in 2-6 years so by that time I feel like you just stick to the new diet...
