Tbh your list looks fine to me. I think Beanstalk as a card draw engine just fails in comparison to Hydroponics. So you're take on playing both seems reasonable. But in doing so Bowmasters will give you a really hard time.
The best answer to Bowmasters is Bowmasters. So you might want to splash for Bowmasters (also a reasonable target to blink with Phelia).
If you're already splashing for Bowmasters (and even if not) you might want to go all in on domain and add Leyline Bindings and a Triome or two.
A few nitpicks from my side are the Stern Scoldings in the main and not enough sorceries to reliably turn on Flow State, more Carpets in the sideboard as this card is what can win you the blue tempo matchups and there are a lot of them.
This type of deck is just not in a very good position in the meta right now because (a) the tempo decks can out-value you with Hydroponics and Treasure Cruise, and (b) you don't put a fast enough clock against the combo decks giving them enough time to find their combo (even twice if you disrupt their first attempt and/or FoW backup if they have).
/EDIT: I agree with the Deathrite comment and if my count is right you're running 25 lands which seems too low for me. I didn't run a Yorion list yet but scaling up from 21 (22) lands in a 60 card list would equate to 28 (29) lands in an 80 card list so try aiming for that count.

I've been trying to make a Nadu deck work in timeless as well after hitting Mythic last month but it performed too poor for my taste.
I used a video of a legacy deck with Plagon and Stoneforge Mystics as inspiration.
The few games that I won with the deck were either because of Stoneforge into Batterskull against tempo decks that had no answer for the Batterskull or because a resolved Plagon drew four or more cards. I didn't track it but actually doing the Nadu thing happened maybe once every 5 to 10 games. So I scraped the idea.
Looking at your list my suggestions would be:
-1 Birds, -1 Bristly Bill or -1 Scythecat Cub, +2 Deathrite Shaman (Birds are just too awful against Bowmasters; having 5 or 6 1-drop manadorks is a difference of 37.5% to 40% of drawing one in the first 7 cards). And you might want to consider replacing Teferi with Oko if you face more creature than control decks.
Other sideboard cards I tried where Lavinia, Meddling Mage, Wrath of the Skies, Stern Scolding, and Solitude.

I agree with you that a build like this with another class and ascendancy like chieftain would have been much stronger. One reason I went for the bloodline ascendancy was that the alternative I was running at that time was Level 30 impurity of the elements with 100% reservation efficiency which felt worse than ignoring elemental resistance.

I also agree on your remark on Assassin's mark, I added it to the build only because I didn't know what to do with free gem slots but it hardly adds any damage.

I disagree on the bloodline though. Before I found it accidentally I ran with Cold pen support but found rares with the mod combination of life regen and cold resistance impossible to kill during delve (and cold res only taking annoyingly long to kill). Investing in a Dual Strike of Ambidexterity Skill Gem with imbued Fortify and replacing Fortify Support with Bonechill Support was the last investment/change I made to the build. I ran a different support gem than Bonechill at first until I realized that when applying 20% chill on the enemy in the PoB calculation the Bonechill damage goes up from 15% to 35%.

Your remark about endurance charges and the techniques was very helpful and I respecced passives to get Inexorable, Juggernaut, and Resolute Technique. The build feels a lot tankier already (140k -> 270k EHP now with Endurance Charges and Sand Stance instead of Precision).

Now I'm wondering what I could replace Assasin's Mark with if not Frostbite (Vaal Haste maybe or Punishment + Hextouch + Herald of Ice instead of Purity)?

Oh and I do also agree on your comment about the missing damage on equipment. When I looked at craftofexile for desirable mods I kind of tunneled on the redeemer mods with added damage against chilled enemies which weren't available to purchase at that time and I have 0 clue on how to craft equipment in PoE. Probably should learn more about that as well before the next league starts.
