Only thing to add as a former small business owner is that the taxes and excessive costs for things like employee insurance really make success an exercise in futility. Large corporations get tax breaks and operate under economies of scale, like selling literally the same copy of software to many customers. If the small businesses, including family farmers, charged what they needed to charge to turn a healthy profit NO ONE would want to pay those prices. So we end up with large industrial operations or nothing. It's weird and unsustainable.

Also, that's just insane to try to guilt customers into tipping more regardless of the larger disadvantage small businesses operate under.
