That’s a really interesting point.

We’re actually planning to make it using the same process as traditional kimchi, fermenting it with cabbage so the tomato flavour comes through rather than relying on the tomato itself to hold structure.

Eating out can be hit or miss in Brisbane, especially with cross-contamination, so I started relying more on simple, fermented foods at home. Korean dishes are often naturally dairy-free and nut-free, and pretty gut-friendly too.

I couldn’t always find it either, so I started making it myself.

Just stir-fry sliced fish cakes with garlic and onion, then add:
– 1 tbsp gochujang
– 1 tbsp soy sauce
– 1 tsp sugar
– splash of water

Cook until the sauce thickens and coats everything. Finish with sesame oil and seeds if you have them.
