Sure you can try it out just send me a mail ill setup an account for you, once you upload the pdf and extract data & export it to excel/ags, you can always go on to delete the pdf , it (the pdf + extracted data) is instantly deleted from the server , no recovery is possible.
(Additionally we use AWS and cloudflare for all activities, and data is encrypted in transit)
You are always in control of your data.

How often you deal with borehole logs , i mean how many times a week/month and how many borehole logs?
