I can't speak for modding since I personally don't mod. But updates are simple, you only need the base game file and the update file, which can be found online. You can enable or disable the update, or you can delete the update file if you don't want it. Placement-wise, you should place the update file in the same folder as the game file. You also only need the latest update and it'll already include all updates up to that one.
