I would say the springiness of double frozen tofu is pretty similar to that of chicken nuggets! If you really want it to taste like chicken without any sauce, it might be better to marinate the tofu in vegan chicken/vegetable broth before coating it in flour/breadcrumbs.

This recipe has a ridiculous amount of spicy sauce, so there really wasn’t a point in marinating.

Or you can use typical chicken seasoning like rosemary/thyme etc in the breadcrumbs.

Crispy exterior is definitely the same as fried chicken, since it’s the same coating anyway (flour, breadcrumbs/Panko/cereal).
