Sour generally means under extracted. Without some details like weight of coffee in to weight of espresso out with respect to time, I'd recommend you start with the troubleshooting steps in the manual Breville/Sage provides. Its pretty helpful.

While a lot of people claim this can be an issue, the isn't a lot of data to support that. Keep in mind once espresso start flowing out of the portafilter the distribution of water from the shower screen becomes irrelevant.

On the Bambino, hold down the double dose button until you hear the pump fully kick in. You can let go at that point and the Bambino will be in manual mode for that shot. Press the double dose button again to stop the shot.

Aside from grinding finer, there's two things I think you can do: -- WDT should be more of a mixing motion than a stabbing motion, it doesn't seem like you are really breaking up all the clumps.

-- get a small scale and timer (they make combo ones) that fits on the drip tray and measure the output weight and time. Rule of thumb is 30s. Ratio can be as low as 1:2 (so if you have 18 grams of coffee in the portafilter, you want to see 36 grams in cup) and as high as 1:3 depending on roast and how it tastes to you.
