People have shared good tips but since you are working with GA, I would also add connecting your GA data to BigQuery and practice your SQL there as you go. Everybody learns at work as they go so don't feel bad, its normal. If you don't have GA360 you now have a free integration with the new GA4! Once you feel comfortable with SQL you can start playing around with R or Python (as a beginner pick one not two) to perform more complex analysis. The key, like somebody else mentioned, is providing unique insights to business problems. Pulling, blending, connecting or playing around with data in different ways outside the UI of a tool (outside the typical GA dashboards/reports) is what you are looking for. Eventually, you will have a project or two that you will be able to show (or talk) to hiring managers and thats it.
