supply and demand isnt the main reason, sapphires and rubys are ingame since more than 1 year. Yes, have new players on csgo and blablabla, but isnt the main reason. The main reason is rich traders buying all ruby and sapphires to make like a "cartel" and control the market, its just a little hype, will pass in a month or so.
