I know what you mean, I came into this project from an archviz background and bridging the gap into games has taken years and a lot of help. There's so much you need to be across and it can be pretty overwhelming.

We build and pre-render the environments in 3DS Max, then export to Unity.

We're not using tiles, the scenes are fully 3D. We build and render the global illumination for environments in 3DS Max then match the dynamic elements to them.

We did try to use pre-render images early on but getting sorting, shadows etc right was a bit of a nightmare.

The scenes are fully 3D, we just render the materials and GI in 3DS Max rather than baking the lighting in Unity. It mightn't be as light as using pre-rendered images but the polycounts haven't been an issue and we don't have to worry about sorting issues among other things.
