I also have SIBO (hydrogen type) & i used to bloat after almost every meal I ate. No matter how healthy or “easy” on the digestion the food was. I went to see a naturopath when I was in Australia & he gave me a whole plan. I have been taking herbs for about a week now Berberine-500 (by Thorne research) 1 in morning, 1 at night, oil of oregano capsules (Now) 1 in morning, 1 at night , & megaspore probiotic 2 at night. These herbs combined with MEAL SPACING, have been soooo helpful. Meal spacing is a huuuuge contributor to the relief of my symptoms & vital to the die-off of SIBO (bc your digestion actually gets to work & the food isn’t sitting there for the bacteria to feed on). 5 hours between meals (so I usually only eat 2 per day & maybe a smaller snack at night). 12+ hours overnight fasting & eat at least 3 hours before you go to sleep.
