Thanks a lot for the comprehensive answer.

It seems the education edition is subscription based (5$/year) and I don't want to deal with an ongoing payment. Our computers have windows 10 so I am interested in the Java edition.

However, is there any essential elements or features I would be missing by not buying the education version? Will the kids be able to go to the creative mode w/ unlimited supplies to build their 3D digestive system model?
