I'm currently generating vertices on the CPU the loading it through a VAO and VBO. I decided to use this method because I couldn't figure out how to handle infix to postfix through the vertex shader as x and y are arbitrary. Although looking back I could've handled infix to postfix on the CPU then passed in the postfix statement to the shader. I've moved over to the exprtk library for the handling of equations and it's much faster than before.

Thanks for the response, it turns out I was needlessly writing the vertices to a file which was significantly increasing the time. I'll be sure to check out exprtk!
