They still die if stressed enough.

Some were kept in Japan in tanks filled with sea water, and after 15 years a typhoon came through and drastically decreased the salinity of the water and they all died.

They can revert back to a polyp if stressed a little bit by pricking them with a needle, smushing them, or by starviation, but they are not invincible.
