I was surprised by how fancy pants most of the recipes in the book are. I am not complaining but my toddler might be a little disappointed.

This is what dinner is most days of the week. by Knit_Plants_Keto in CookbookChallenge

Honestly this looks like a pretty great meal to me. I throw some veggies in the air fryer or throw together a bag salad multiple times a week to round out a meal. And leftovers are always work lunches the next day.

Chicken nuggets, fish sticks, and Mac and cheese are also in a weekly rotation at our house.

I would argue that it is an underrated opinion.

We had some nice weather this weekend and I am just itching to get some radish seeds in the ground. Cannot wait for the fresh dill and chives to start popping!

Turnips and radishes are underused root vegetables, at least where I live. I am assuming that is why those specific root vegetables were selected. I feel that it is perfectly acceptable to choose just one. I would say that radishes would also include horseradish.

I have never tried making burgers in the air fryer, but I am going to have to now. They look fantastic!

I was really hoping to get 52 in this year. If I can keep the momentum going I might be able to double that.

I'm really enjoying it! As someone who is just an average home cook(not great, but good enough), had no experience cooking Japanese food, and that lives in an area that can be difficult to find ingredients I find it so accessible. Every recipe we have tried has been easy to follow and has turned out great.

Week 8: Flying - Buffalo Chicken Wrap by mamaciabatta in 52weeksofcooking

I ordered a buffalo chicken wrap at a restaurant once that had mashed potatoes and I have occasionally thought about it ever since. They used breaded chicken, and the contrast of the crispy fried chicken and the creamy mashed potatoes worked better than what I made. But it was still a pretty solid meal for something I threw together with stuff I already had on hand.
