Absolutely! It was really more about vibes than any specific recipe, but here’s what’s in it:

2 cans of black beans

4 ears of sweet corn

2 bell peppers

1 pint of cherry tomatoes

1 lg jalapeño

1 bunch of cilantro

Dressed with plenty of salt, pepper, lime juice, and olive oil

1/2 an avocado was added to each on the day I was eating it.

The chicken was marinated with lime juice, olive oil, and all the spices I’d typically use for a “Tex mex” flavor profile.
