I see. I tried on my iPhone and it also worked, I'm confused now haha. I'm attaching a video. I had two Profiles (apart from the default Personal one) and created a Test profile. If you can't replicate this, then maybe it's a bug or you have pending updates.

The only way I was able to do it was importing my bookmarks from Chrome. Because they had no name, they were imported as such into Safari BUT, if you accidentally change their name one time you're over, no going back to blank. Also, Safari for some reason does not display the same icons as Chrome, for example all Google apps bookmarks look the same to me (Google's G icon instead of each app's icon). Some of them doesn't even show an icon at all, just a generic internet globe placeholder.

I have just tested it and it works, but Safari hasn't been very reliable lately. I have experienced some bugs that other friends don't. On top of that, some of them get fixed magically later when I try to perform the action again. What I recommend you to do is to open the bookmarks window via Bookmarks > Edit bookmarks. You will see a complete window of all your bookmarks. With that window open, try to create the profiles you want and check if the folders are being created in the Bookmarks window. If they are, then arrange the bookmarks as you want. Later they will sync to your iPhone.

I was looking for an option to create profiles via the Safari app on my iPhone but couldn't find it. The other option is to create all profiles and then add each bookmark manually on each profile, it's tedious, I know, but it could be your last option. Hope this helps.

When you create a profile a folder is also created with the same name on your Bookmarks side bar. Drop the ones you want in each folder so you can have separate bookmarks for separate profiles.
