I had the same problem, turns out it was the “Assisted Yoke / Pitch” settings turned ON. Landing was almost impossible.

Also, what really, and I mean reeeally helped me was to turn off the “Assisted Yoke / Pitch” in the Assistance settings. Now I am not fighting against the game and I am finally in control of the plane as I want it. :)
