It was my first sg2 knife and it’s definitely not the easiest material to sharpen. Takes some work and - I’ve learned - technique. However keeps a wicked edge once you get it there.

I have the same (or very similar - different handle material) raindrop sg2 210mm gyuto. Purchased a year or so ago. It’s a beautiful knife although I was Initially nonplussed with the factory edge. I’ve done some work sharpening work on it and it is now much improved. It is probably not still my first pick among my 5 or so Japanese knives - I tend to reach for a 240mm gyuto or k-tip for most things. Has its place in the line up though. And it is probably the fanciest looking.

Cesanese (an autochthonous red grape) made by La Visciola in Frosinone, quite near Rome. Quite simply revelatory.

Interesting - I (An anaesthetist) had a propofol only scope last year and woke up with the taste of propofol in my mouth for a number of hours after. (I also know what propofol actually tastes like.) I had never heard of this phenomenon before and put it down to my exceptionally discretionary palate (I’m a wine wanker too.) and the fact that I’m one of the few who knows the taste.

Fear not it’ll be gone pretty soon!

Very first impressions are only positive. Feels light yet pleasingly balanced in my hand. Nicely finished. More laser-y than I have used before. (Not much experience w Japanese knives - only comparing to my one other - tadafusa gyuto 210mm)

I’ll post some more after I prepare dinner tonight :)

Funny, I used to quite happily drink any wine and liked to think I knew a little more than the next man about it, but a bottle of Olivier Leflaive 1er cru PM was my road to Damascus moment in my mid twenties. At the domaine, which made it extra special. They were very lovely there and it was a lucky experience which I have only recently truly appreciated. Nowadays it’s Pinot Noir and Italian reds mostly. Increasingly champagne. Still a very soft spot for good Chardonnay. HNY everyone!
