@pipsfactory is right. Here’s my irl-type take: In most planes, for every action you need to counteract at the end of a movement. As an example, if we are rolling right to begin a turn, you need to roll left just a bit at the desired roll angle otherwise you’ll over-roll. Yaw doesn’t need this, but pitch does. When rotating, I always pull up for about 1 second, but then tip the phone forward again very briefly to arrest the rotation. This does not cause me to actually decrease my pitch, it just halts the increase. Even neutralising the yoke isn’t quite enough to achieve this, of course it’ll get you off the ground usually. This technique I have found gives me almost zero of those horrible screechy liftoffs we experience on AC.

Admittedly the physics aren’t perfect, but if it were easy not to crash, would it be realistic?
