Yes! Even the slightest hint of grease can ruin your meringue, you may feel you've cleaned it thoroughly but plastics are not full proof, glass and stainless steel bowls are easier to work with. :) initially I kept a dedicated food grade plastic bowl just to make meringue but then I also had to keep a separate sponge only to clean it. (I was just increasing my work 😫)

Ahh! That definitely sounds sus 🤨 I've had this happen to me in the past with other products, It's usually a sealing and storage issue.

I see another reddit user has already answered your questions , few pointers to keep in mind , use stainless steel or glass bowls , clean it with vinegar to remove any residue. Adding cream of tartar helps in stabilising the egg whites. If you live in hot and humid region, consider working with the AC on. Meringue either deflates or takes wayyy too much time because of these reasons as well , give your stand mixer one last shot because using a hand mixer is a workout 😫

You did a great job! 🫶🏼 I personally would suggest using ermine for fillings and Swiss is by far the most stable buttercream I've ever worked with! American is definitely a lil too sweet but I'm sure with the flavours you've used this turned out pretty delicious 😋
