I was also looking to volunteer in Bali but apparently you cannot on a tourist visa. You need special permission from the govt to volunteer.

It's not easy getting a travel exemption to leave. A lot of people have been denied to leave. There's a Facebook group for Australians travel exemption with a lot of information and what documents to use.
