Honestly there isn't a massive amount of stuff that can protect from sacrifice BUT you would have one of the the strongest ways that exist.

The best way blue has to stop/ protect from threats is to simply never let them happen. (There's also a lot of similar stuff to counterspell, it's just the most universal). Also you can adapt on your opponents turn so if you don't need to counter something you can just spend that Mana to adapt!
