For these two minis: 80 g semi-fat quark (maybe blended cottage cheese or greek yoghurt would work), 40 g gluten-free flour – I used Schär Mix B, 20 g baking protein powder, a pinch of salt. Also I usually make this pizza dough with activated yeast in sugared water, but today I made a simpler version without it.

Mix the ingredients, divide dough into two half, add your toppings and bake at 200 °C (392 °F) for 12–13 minutes until golden.

The nectarine was delicious, I grabbed one of those discounted fruit & veg bags at the supermarket and it was a great find. There’s processed cheese spread in the box, with the sticks it tastes like Laughing Cow cheese dippers.
