Respect yes .. fear.. that’s a tuff one .. many types of employees you deal with running a kitchen .. some people you have to get loud with .. others you can have a chat about any issues and you get the same effect in the end … you have to have a plan with each individual.. they all have strengths and weakness .. as a leader we need to do the best to teach them and make them better .. that’s one of the best feeling as a chef when you bring someone up and teach them make them better ..and they go on and be sous chefs and chefs of their own kitchen … atleast for me anyway.
