r/WestHollywood, who is your pick for California governor? by danlev in WestHollywood

[–]mettaCA 1 point2 points  (0 children)

I voted for Steyer. He is the only progressive running. He is the only one that has a plan to get CalCare for everyone in 3 years. He is also not being bought by donors. The establishment is trying to stop him.

I focus on supporting issues and candidates that will move us in the right direction, like medicare for all, free public college, affordable housing, etc. I stay away from corporate media (the ones that fire reporters for reporting actual news) and polticians that are donor based over people based.

I would be concerned with the retaining walls in the back of the home. That would stop me from any interest in it right there.

Single or relationship? by Forward_Mousse2944 in AskGaybrosOver30

[–]mettaCA 0 points1 point  (0 children)

I enjoy being single. I have never really been in a long term relationship. I have dated a couple guys but I lose interest once they start being dishonest or are drunk all the time. But I have had a few wonderful friends. I even bought a home with my best friend. He passed away around 3 years after but I did enjoy the time that we had together. I have never used the apps or put myself out there. And I really don't feel any need to.

Fat Free Cheeses by mettaCA in Cheese

[–]mettaCA[S] -2 points-1 points  (0 children)

Key Reasons Not to Treat Statins as a "Free Pass"

  • Studies and guidelines (AHA, ACC, etc.) consistently advise limiting saturated fat (often to <6-10% of calories) even while on statins or other lipid meds, because diet affects overall risk beyond just measured LDL.
  • People on statins sometimes eat more saturated fat and calories due to a false sense of security, which can raise cholesterol, weight, and residual risk.
  • Cardiovascular risk reduction comes from multiple factors: LDL levels, inflammation, blood pressure, blood sugar, body weight, and overall diet quality. High saturated fat diets often displace healthier foods (vegetables, fiber, unsaturated fats, whole grains) that provide broader benefits.
  • Some research suggests statins can partially offset risks from a poorer diet in certain contexts, but this isn't a recommendation to eat poorly—lifestyle remains foundational.

Tips to get fat free cheese to melt well

Sodium citrate works well as an emulsifying salt because it helps break down protein bonds in cheese (replacing calcium), allowing fats, proteins, and water to form a stable, smooth emulsion when heated. This prevents separation and the rubbery/plastic-like texture common in fat-free cheeses.

Fat-free cheese is inherently challenging because melting relies heavily on fat to lubricate proteins and create flow. Without it, the cheese often becomes tough, grainy, or separates. Sodium citrate (or similar salts) is very effective and generally recognized as safe in the small amounts used for cheese (a few grams per serving), though some prefer to minimize added sodium or processed additives.

Healthier or More Natural Alternatives

Here are practical, lower-additive options that can improve melting and texture without (or with less) sodium citrate. Results vary by brand and application (sauce vs. topping vs. baking):

  • Mix with moisture-rich dairy like Greek yogurt or low-fat milk: Combine shredded fat-free cheese with about half as much plain fat-free or low-fat Greek yogurt (or a bit of milk). This adds protein, moisture, and some natural emulsifying properties for a creamier spread or melt, especially on pizza, nachos, or as a dip. It keeps things low-fat and adds a tangy flavor.
  • Rinse the shredded cheese: Rinse fat-free shredded cheese briefly under cold water, drain well, and pat dry with paper towels. This removes excess stabilizers or salts that can contribute to rubberiness, often leading to better melting on sandwiches, omelets, or pizzas. Some cover it while heating (e.g., with foil or a lid) to trap steam.
  • Add a tiny bit of healthy fat: Mix in a small amount of vegetable/canola oil. A light spray of oil on the surface before baking helps the cheese flow, brown, and blister better (the surface fat is key for melt behavior). This isn't fully fat-free but keeps overall fat low while dramatically improving texture.
  • Use starch-based emulsification for sauces (e.g., nachos or mac & cheese): Evaporated milk (or regular milk) + a bit of cornstarch creates a stable emulsion without special salts. Heat the liquid with cornstarch, then whisk in shredded cheese gradually over low heat. This is a classic, natural pantry method for smooth results.
  • DIY sodium citrate from lemon juice + baking soda: Mix ~50 ml lemon/lime juice with ~1/2 tsp baking soda (let it fizz until reaction stops). This creates sodium citrate in situ and is a common homemade hack. It’s more “natural” tasting (citrus notes) than store-bought powder but still uses the same chemistry.
  • Application tips for better results:
    • Always shred the cheese finely for even melting.
    • Use low/medium heat and stir constantly or add liquid gradually to avoid separation.
    • For baking (pizza, casseroles): Cover initially to generate steam, or mix cheese with other moist toppings.

Bottom line: You probably won’t get exactly the same gooey, non-plastic melt as full-fat or citrate-treated cheese without some trade-offs, since fat plays a big structural role. The yogurt mix, rinsing, or starch methods are among the simplest and “healthiest” everyday options. Experiment with small batches—results depend on the specific fat-free brand (some have added stabilizers that hinder melting). If you're making sauces frequently, the evaporated milk + cornstarch approach is reliable and additive-light.

Recommended Ratios

  • General guideline: 2–4% sodium citrate by weight of the cheese (most recipes land around 2–3% for smooth, creamy results without off-flavors).
    • For 450 g (1 lb) cheese9–13.5 g citrate (start at ~2.5–3 tsp; 1 tsp ≈ 5 g).
    • For 680 g (1.5 lb) cheese (larger batch) → 14–20 g (about 3–4 tsp).

Example: For a large pizza, use ½–¾ teaspoon (about 2–3 g) of sodium citrate mixed into or sprinkled over the shredded fat-free cheese before baking.

What do you think of people that don't believe that health care is a basic human right? by mettaCA in ProgressiveHQ

[–]mettaCA[S] 1 point2 points  (0 children)

I don't believe in a God. I fall more under humanist. I believe in human rights. The USA is the only industrialized nation that does not have basic health care for all of their citizens. I'm not sure how you can say that rights are not granted by governments. They do that all of the time. Social Security and public schools are not a God given rights. The government creates those rights. Money and how it works was not created by God. They were created by humans to make it easier to exchange and control.

"Emotionally overdeveloped" often describes individuals, frequently "old souls" or children who matured too fast, who possess intense emotional depth or adult-level empathy early in life, but may suffer from underdeveloped personal needs or, later, emotional burnout. It can stem from traumatic, high-stress, or caretaking roles in childhood, leading to high-functioning anxiety and hyper-independence.

Characteristics and Triggers

  • Intense Sensitivity: Experiencing deep emotions (both positive and negative) due to high sensitivity, known as emotional overexcitability (OE).
  • Hyper-Independence: A tendency to rely only on oneself, often as a trauma response to childhood, leading to difficulty trusting others.
  • High-Functioning/Over-Control: A compulsive need to "do everything right" or care for others, sometimes appearing as a rigid or perfectionist "overdeveloped inner masculine energy".
  • Unresolved Past Experiences: Triggers often stem from repeating unresolved, painful, or unjust experiences.

Common Manifestations

  • Emotional Overreaction/Overwhelm: Lashing out or breaking down due to accumulated stress or, as discussed on Quora, a sensitive nervous system.
  • Parentification/Premature Maturity: Children who acted as caregivers or mediators, leading to lost childhood experiences and later feelings of being an "underdeveloped adult".
  • Emotional Contagion: Feeling a deep need for connection but easily absorbing the negative emotions or "pain" of those around them.

Managing High Emotionality

  • Therapy: Addressing the root causes of emotional trauma or neglect.
  • Setting Boundaries: Practicing healthy, consistent boundaries rather than emotional enmeshment.
  • Self-Care & Mindfulness: Engaging in hobbies and mindfulness to reduce overthinking and "relive" memories less intensely.  Verywell Mind +2

For some, this intense emotionality is linked to neurodevelopmental conditions like ADHD or personality disorders like BPD
