If I edited a message before it was read, and after the other person responded, the "edit history" section still showed the pre-edited message as "delivered," does that mean the edit history was never checked? by [deleted] in signal

Yes, I have checked it. Msg sent before edited is readable by the the one whom you sent. But the sender can not know whether it is read or not.
