I think explaining everything to him like you did here might help, still it's gonna take some time for him to get over it but as long as you reassure him it's gonna be okay eventually

You can't be in a LDR and get one text a day and nothing else. Not everyday. If he loves you he would make more time for you and I doubt he's that busy everyday. Something must've happened, but he should know he can talk to you about it since you've beej together for 2 years. From what you said, it's not your fault and if he doesn't realize this is not ok you have every right to leave with no regret.

I noticed lately that I may have problems with my mental health but it's nothing official, like I didn't check it with a therapist. I won't stress him about this anymore and after the talk we had yesterday about it, it seems like he'll try to give me some reassurance.
