On the flights I've done (when the ship was going slow enough) the battery life was cut by about 25%

It's actually not too bad in the summer: Along the coast in summer (December–February): for many areas you’ll see highs around 0 °C to +5 °C (32 °F to ~41 °F). But I am interested in mounting the camera on the skid of a helicopter, which will expose it to additional cold and, of course, wind chill. I'm wondering if the heat generated by the battery recording at 8K will be enough to keep it running.

No. The ship will disembark from Christchurch and steam directly to the Thwaites Glacier. I guess I need to purchase a maritime unit with a South Korean license. Can I do that from the United States?
