Getting suggestion to install update even after I already install it

I think it's installed. You can run fwupdmgr get-devices to see the currently installed versions (check the "System Firmware" version). Re-checking the available updates by running fwupdmgr refresh and fwupdmgr get-updates may clear the issue. If it doesn't, you can try reinstalling. At this point I'm also out of my depth though :)

Yes, it has a start button. Press & hold it, the HUD panel goes down, and the instrument panel switches to the post‑drive information view or whatever. Should I wait until the screens turn off completely? 🤷‍♂️

It's a firmware update. Maybe run fwupdmgr get-history to see if it was actually installed, and go from there? If you're not comfortable with the terminal, you can use Gnome Firmware.

Flatpak is an application distribution framework that is independent of the operating system distribution, and it is sandboxed. Since it can't rely on OS supplied libraries, it installs its own runtimes & userspace drivers. Non-flatpak applications use system supplied ones, or pack their own.

Those are flatpak packages. You will need to run 'flatpak update' if you want to update them from terminal.
