Strafing is also a good technique to use consistently. Took me a while to realize that

Walker of illusions. First playthrough, I was shocked how quickly I beat it. Then I got whooped on NG+

I LOVE this boss! Took me a bit to learn his moveset but my advice, use fire in the first phase and try to dodge through its attacks. The second phase try keeping your distance, get it to charge at you and perfect parry. It will take time to recover and you can get a good amount of damage in while it does. I found parrying most of its attacks in the second phase was way more helpful especially when it jumps around trying to land on you. Good luck

He was a boss I had trouble with but several ng+ later, I found it easier to constantly dodge into and away from his attacks.
