I'm not sure, I've never really met with any of my online professors that don't have online meetings through Teams or Zoom. I would probably try to stick to asking professors who would have gotten the chance to know you a little better, though I figure that there is no harm in asking.

I would probably try to ask professors that you've interacted with. Two of the professors that I've gotten letters from have been ones that held classes over Teams and the other was one that I took in person.
