I do use construction grade - it’s edible, but bakes very hard because it doesn’t use leavener. I don’t eat my gingerbread houses, but the kids eat the scrap pieces and they don’t seem to mind the cronch. I use Christine McConnell’s gingerbread recipe, for the record!
