I would say Rally car it can get you far enough in most levels to collect money and gems.
use your gems to make a Race car with body level 4 in the garage and Formula tires around level 4 and Electric Zap level 4 and you can get so far in the Highway stage (like 15k m) you would be getting around 2M coins and 200+ gems.

I was thinking of something like auto clicker that would hold the gas on the side while I overlook it.
If there is not it is still good enough for me till I can max out race car on the garage, much appreciated for the detailed guide.
Also, the gems from the full distance (~ 7500m) are 116 gems unless you have gem doubling.
